Interview with “Head Intoxicologist” Eric Hobbie

Eric Hobbie Head Mixologist

Every cocktail tells a story. But have you ever wondered about the story behind the cocktail-maker?

At Camden Cocktail Lounge, we’re committed to creating the most mind-blowing cocktails that you’ve ever tasted. To get a better idea of the liquid libations that await you, we’ve put together an interview with “Head Intoxicologist” Eric Hobbie. Listen and learn!

Can you tell us a little bit about yourself and your personal Mixology history?

I have been bartending in family owned restaurants since I was 16 but don’t say anything cause the legal age was 18 in New York–LOL. I got my first true craft experience opening Charlie Trotter’s restaurant in the Palazzo.

There, flavors really had a purpose in the glass; I was able to use unique and hard to find ingredients, and I was told to use my imagination and create different sensations using food and beverage.

My first write up came by a food and beverage blogger when I was working for Mario Batali and Joe Bastianich at B&B inside the Venetian where I was doing unique infusions and working hand in hand with our local forager at the time. He wrote about a cocktail I had on the menu “The Green Monk” Hendricks Gin , Meyer lemon juice, cucumber, basil, and yellow chartreuse. Momma was proud. I think it was on her fridge for 2 years. Also getting asked by the maestro himself Salvatore Calabrese to escort him down to tales of the cocktail and shake at the gala for his event. I always wanted to go to Tales of the Cocktail but I wanted to earn my way. Being invited by Salvatore was certainly earning it.

Camden Cocktail Lounge is scheduled to open this spring. How are things going with that process?

Camden is special venue. We plan on executing a program unlike any other program in Vegas. It has been a great experience opening Camden. Clique Hospitality is built on legends. Andy Masi and the crew he has built in the last decade is a force to be reckoned with.

Camden Cocktail Lounge is being touted as offering “mind blowing cocktails”. Can you give us a sneak peek as to some of the offerings?

Camden will be offering craft libations with a twist. We are going to be really honing in on senses. We want to serve cocktails you wanna touch. Cocktails that are visually stimulating. We want our cocktails to engage all of your senses.

Can you tell us a little bit about the process of curating and creating the menu for Camden Cocktail Lounge?

I was told to have fun with the menu. When I was approached by Clique they told me they were looking for over the top, destination cocktails. The theme of the room is very artsy and elegant, and I think I was able to capture that same beauty in our cocktails.

What about the upcoming opening of Camden Cocktail Lounge has you most excited?

What makes me so excited about the opening of Camden is seeing our team execute and deliver a very unique experience.

What’s one of your favorite cocktails to make, and why?

My favorite cocktail to make and drink is a Negroni. It’s simple: only 3 ingredients in equal portions. Yet if not measured properly the drink is way off.

What’s one type of drink that you wish more people would try?

I wish people would try more gin cocktails. Most people have had a bad experience with gin at a young age and have a hate for it now. But as a spirit gin is such a versatile liquid that has incredible botanicals that make whimsical cocktails.

If you had to subsist on just one cocktail on a desert island for the rest of your life, which would it be and why?

If I was stuck on a deserted island and only had one drink to drink the rest of my life it would be our Green Goblin. It is the most refreshing cocktail I have ever had. We nitro muddle fresh mint and basil. Shake it with silver rum fresh lime juice and simple syrup.

If there’s one thing you’d like to pass on to customers coming to the lounge, what would it be?

When a guest steps into Camden, they become family. We want you to become a part of our culture. We want you to tell about your experiences to your friends and family. We want you to leave with a story.

Everything tastes better with a backstory, and cocktails are no exception. Now that you’ve gotten to know a little bit about Eric Hobbie, the man behind the cocktail mixer at Camden Cocktail Lounge, it’s time to taste his work for yourself. See you at the lounge!
